That said, to this day, I tagged everything ever of mine, also a selection of songs from 2012 for personal use.

There's nothing unexplained about it, it's allowed because it can be confused as part of the acronym, like VSTi.

It's a linguistic gray area where both are right.

Now I'm off making the MP3s format (except not really).

For the third option, you are utilizing elision to create a contraction tongue
As an aside, I think the possessive form for multiple MP3s would be MP3s'

Admittedly this is not very important in an informal setting lol
