I remember wanting to say such a thing somewhere two years ago, then I remembered I couldn't be arsed.
That said, to this day, I tagged everything ever of mine, also a selection of songs from 2012 for personal use.

possessive: MP3's
contraction: MP3's
Pretty sure I tag mine if I do the AIF to mp3 conversion in Audacity. If I don't, then I don't.

Thanks. I somehow understood there was an unexplainable exception for acronyms. About the last case I think you mean elision, not contraction though?

There's nothing unexplained about it, it's allowed because it can be confused as part of the acronym, like VSTi.
It's a linguistic gray area where both are right.
Now I'm off making the MP3s format (except not really).
Oh damn, forgot about that. I used to do it back in 2012, completely forgot tagging MP3s was a thing this year...

For the third option, you are utilizing elision to create a contraction
As an aside, I think the possessive form for multiple MP3s would be MP3s'
